  1. 1. Mix dry ingredients in a bowl
  2. 2. Cut in cold butter, I cut up the butter in pea size pieces.
  3. 3. Mix in heavy whipping cream and eggs
  4. 4. Spoon onto greased cookie sheet and flatten
  5. 5. Cook at 350 degrees for 16 minutes

Keto friendly butter cream icing

We do not like the cooling effect that most alternative sweetners give off so I created an icing that uses very little sweetner and is perfect for icing cakes and such. Enjoy!

  1. Blend all ingredients together and taste test then adjust the sweetness to your liking. We don't like overly sweet icings so a teaspoon or 2 is enough for us.

Keto pumpkin bars

So I have been experimenting with different recipes I have found on Pintrest, today I tried Wholesome Yum’s pumpkin bars.

Now the original recipe calls to bake for 30 mins but next time I make it I will cook for closer to 40 mins just to try to get the firmness I like in a cake like dessert, otherwise this is an awesome recipe!  Pumpkin Bars. Go check them out!

The BEST Keto butter biscuits!

Praise the Lord I found a way to make a great replacement biscuit! Lol. I am a southern girl and we like our biscuits! I stumbled upon a recipe that I had and I did some experimenting and created the perfect, in my opinion anyway, butter biscuit.

It has the soft buttery texture that I was craving and even tastes good cold! Super simple to make and you have great biscuits in about 30 mins start to finish.

Almond Flour Butter Biscuits

Oven: 350 degrees

Cook: 16 minutes

Prep: 10 mins

Yield: 10 biscuits


2 cups Almond Flour

1/4 cups Coconut Flour

1  1/2 tsp baking powder

1/2 tsp xanthum gum

1/2 tsp salt

1/4 cup cold butter

1/4 cup Heavy Whipping Cream

3 eggs

Step 1. Mix all dry ingredients in a big bowl

Step 2. Cut in butter. I did this by cutting up the butter into pea size blocks and mixing it in.

Step 3. Add eggs and HWC

Step 4. Blend with a blender or just mix by hand.

Step 5. Form dough into balls and place on greased cookie sheet.

Step 6. Cook for 16-18 minutes depending on your oven

Enjoy with butter or keto jelly or with sausage gravy!

Keto chili

We LOVE chili in this house! I HAD to find a keto friendly version for this fall/winter meals, After a few trail and errors we like Peace love and low carb’s version.

I like to add sour cream and cheese or sometimes I add peanut butter 🙂 Try it out! I make this for me and then my husband will add beans to it for him. Oh have I ever mentioned I LOVE my Insta Pot? Check it out in the Amazon link below:

Wooden car build

Fridays are our fun days so today we dug out an activity we have had a while.

Super fun and simple. Little Man (9) was able to do it all independently 🙂 The kit came with 3 wooden cars, 3 sheets of stickers, paint and paint brushes and glue.

Everything gets painted then glued/pieced together.

I love this boy so much! While he was working on this I was experimenting with Keto Zoodles and taking pictures for blog posts, he said ” Mom, can you wait till I am done!?” He is getting to the age of not wanting his picture taken 🙁 Too bad for him though cause I will never stop!



Keto Zoodles

I have always been a huge fan of pasta and since going full Keto back in January 2017 I have been struggling to find a suitable replacement. Today I tried a different way of cooking the zoodles.

What you need:

3 small zuchinni

your favorite keto friendly spaghetti sauce or alfredo sauce

1 lb grass feed beef or 1 or 2 chicken breasts if doing alfredo

Garlic salt to taste

First I cut the ends off and peeled the skin off, you can leave the skin on if you like. I prefer it peeled.

Next I set-up my spiral cutter, I really like this one because (1) I got it super cheap at a garage sale and (2) the feet have suction cups so it stays in place while using it! (3) my big white bowls fit perfectly under the edge of it to catch the zoodles.

Get to making spirals! 🙂

3 small zucchinis will fill these bowls.

Usually I just put the noodles in with the sauce and let it simmer but I was not happy with the texture so this time I stir-fried them with some garlic salt while I cooked the hamburger.

Doesn’t that look yummy! When cooking the zoodles like this it will reduce the bulk by about half so this was enough for 1 person, well for me anyway 🙂 I did not eat the whole 1 lb of cooked beef and sauce so I put it away for future use. Have fun experimenting and Keto on!


Keto chocolate chip cookies

It is beging to be baking and soup season in my neck of the woods! Some of my favorite memories is baking and cooking with my grandma. My little man loves to work in the kitchen with me and as a bonus I can record it as math and science for the day! Score 🙂 I searched for a keto friendly cookie that everyone in my home could enjoy, my husband is not full keto and does not like alternative sugars with the cooling effect they sometimes have.  I found a good recipe at Meaning ful eats.

We got just about 50 cookies from this recipe. My husband even liked them! Keto on friends!

weigh in 11/7/2017

Hello all! Been a busy last couple of weeks with everyone, including myself, at home and work being sick. For those who don’t know I work fulltime in the home healthcare industry providing care for developmentally disabled adults in a small group home setting. I have 4 individuals, 2 boys and 2 girls, the girls have been sick and therefore I ended up sick. Then my son was sick…oh well everyone is getting better and life goes on! I have to say I do love my job and have done this kind of work since I was 20. Maybe after my son is grown I can look into management, but for now I will stick with my overnights.

Now onto my weight….it has not changed but after the Halloween party I did not expect it to. Lets just say a little alcohol was involved, lol.

I weigh myself about every other day so I know I was up 2 or 3 pounds after the party, 10/28, but as of today I am back down to what I was before. Honestly I don’t expect to lose any over the holidays but I am determined to stay Keto through them 🙂 Thanksgiving is coming up and I plan to try some new recipes so I can still have the comfort foods but not the weight gain everyone else will have!

Pumpkin painting

Today we took a break from regular schooling and took time to paint our pumpkins. We usually carve them but I thought it would be more fun to paint them and they will last longer. We got an hour of art class in and then we went grocery shopping.

Little Man and dad picked up pumpkins this weekend while I worked 12 hour overnight shifts. First we washed and dried the pumpkins. Next we drew out what we wanted to paint with a dry erase marker and finally we painted them.
